Oh wow, we would be totally lost in the kitchen without our Le Creusette French oven. It is so very well made, and almost magical in the sense that everything we've ever cooked in it came out so good. It's not non-stick, but it doesn't have to be. Non stick surfaces aren't the right choice for many recipes anyway, as they don't really allow meat to sear properly (the Maillard reaction, I think it's called). This pot is perfect for that, and while some food will stick to the bottom, it is always easy to clean with a scotchbright pad. For really stubborn, burned food that got stuck to the bottom and won't come off, simply put some water in the pot and put it back on the stove. Let it boil for a few minutes and then empty the water out and then the stuck-on food should come right off.

We've cooked so many delicious meals in this pot. Even just tonight, I took some baby potatoes and threw them in the pot with some olive oil and butter. Put the lid on and stirred them every few minutes until they began to get soft, then threw in some salt, pepper, chopped garlic and rosemary in the last few minutes of cooking. Yum! So easy, and the 'taters got perfectly browned and flavorful without getting burned or mushy.

The only caveat I would offer is that the Le Creuset cookware is very heavy. It may not be a consideration for most people, but if you are thinking of giving this as a gift for your 90 year old frail grandmother, you may want to think again. That said though, Le Creuset cookware is the best, and every household should have at least one decent sized French oven like this.

There really is something special about Le Creuset. Prior to finally splurging and buying one for myself, I had cooked with a few of their cast iron series pieces on several occasions and always loved them. I chose this larger 7-1/4 quart because I prefer to cook once and eat for a few days after on the leftovers.

My first dish in the new (cassis finish) round oven was an Indian butter masala, to which I added grilled tandoori-style chicken. Excellent results! Smooth, even cooking, great heat retention, and easy clean up afterward. I was a little concerned that the turmeric in the masala might discolor the enamel finish on the inside, but it came away spotless with a quick scrub from the nylon brush. You need to let it sit a while after cooking and then fill it with some water and a little soap for a few, but so far it has cleaned up every time with minimal effort. I've even burned on some buttermilk fried chicken batter over several batches and it all came off with just a little elbow grease. Also ran it through the paces on a couple of braises (pork and beef), along with two slow oven-cooked beef stews and all came out very nicely.

That said, I've only owned it for a little over a month now, so it's impossible for me to render an opinion on product durability. But I do know folks who have been using Le Creuset pots and pans for 10+ years and still swear by them. Unless they've drastically changed their manufacturing process and quality control, I dare say that the newer batches will prove just as rugged over time as the older ones. A little care goes a long way and while you don't really need to baby a cast iron pan (even one with an enamel finish), it doesn't hurt to read and follow the "care and use" instructions included in the package. In any case, I'll come along somewhere down the road maybe a year or so from now and report how things are going.

Overall, this is a great piece of cookware in my opinion. Yes, it is very expensive and I hesitated on the mouse button for a while before committing to the purchase. But it certainly meets all of my needs as a home cook and does so to a higher degree than any other brand I've used in the past.

Like most people reading these reviews, I did my research and wondered whether I would regret spending so much money on a single item of cookware. Well, let me assure you, it's money well spent. I just cooked my first-ever perfect pot roast (I have been pot-roast challenged for years), and though I had a great new recipe this pot gets most of the credit for turning out a deliciously tender, juicy roast. I was also amazed at how beautifully it cleaned up. After going from stovetop to oven and back to the stovetop, I thought surely I would have to soak the pan but nothing stuck at all. All it needed was a quick hand washing and it looked just like new. Now I want a whole kitchen full of Le Creuset!
